  • 1 cup coconut milk

  • 2 tablespoons olive oil
  • 2 skinless, boneless chicken breasts, cubed
  • 2 medium sweet potatoes, cubed
  • ½ medium-sized red onion (chopped)
  • 1 small eggplant (cube shape)
  • 2 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger root
  • 2 teaspoons ground turmeric powder
  • ½ cup low-sodium chicken broth, or more as required


  1. Heat the olive oil in a large deep skillet on medium-high heat.

  3. Add sweet potatoes and onion; cook and mix until onion is translucent for 2 to 3 minutes.
